Cauliflower is such a versatile and under-rated veggie because its flavor profile is so minimal and it is very adaptable to whatever you cook it with. In this casserole you’ll cook the cauliflower then mix it with a lot of cheese and happy fats, add some bacon, cover with cheese and bacon and bake!!!
